What I know for myself is that The Art of JOY is strictly related to the way I eat!
So I always try to be intentional about my nutrition...
Some of the dishes I've cooked from scratch and eaten in April. Whenever possible, I like to be organized and prepare larger amounts of food to be portioned and frozen.
"Healthy pleasure" is my guideline these days...
Here's what I cooked (to give you some inspiration for your own cooking, accordingly to your taste and needs!):
Here's what I love eating!
Calzoni with broccoli, olive taggiasche and cheese... I prepared the dough from scratch, too, and let it double in volume before rolling it, as you'd do with pizza.
Focaccia with red chicory, ham and cheese...
Pasta with fresh tomatoes, salsiccia and cheese...
Tomatoes stuffed with tuna, breadcrumbs and Parmesan cheese...
The tart actually was an experiment, creating with what I had on hand and coming up with my own recipe- this is generally the way I cook and love cooking! I'm not a person who loves to be restricted by a recipe written by somebody else: I love to be inspired by recipes, or by something I see in a shop or magazine, and then I go ahead and create my own recipe!!
I have to say we really loved it and I cooked this multiple times after that first experiment.
